Turkey & Roast Beef Croque-Madame

Bring the French Bistro home with this Gourmet Sandwich, made with Turkey, Roast-Beef, Swiss, Gruyere and a Fried Egg.
Ingredients
- 7 tablespoons Butter
- ¼ cup All-Purpose Flour
- 2 cups Milk
- 2 tablespoons Mustard
- ¾ teaspoon Salt
- ½ teaspoon Pepper
- ½ teaspoon Nutmeg
- 8 slices Sourdough Loaf
- ½ pound Turkey
- ½ pound Roast-Beef
- ¨÷ pound Swiss Cheese
- 1½ cups (6 ounces) grated Gruyere
- 4 eggs
Instructions
- Preheat the oven to 400 Degrees F. Grease 8-inch square baking dish.
- Make Roux: Melt 6 tablespoons of butter in large skillet over low heat until bubbling. Whisk in Flour and cook for 1 minute. Slowly whisk in the Milk and cook until thick and bubbling, 3 to 5 minutes. Whisk in Mustard, Salt, Pepper, and Nutmeg.
- Pour thin layer of roux into baking dish
- Cover roux with 4 slices of Sourdough Loaf, pile each sandwich with desired amount of Turkey, Roast-Beef, and a slice of Swiss Cheese. Add top layer of Sourdough Loaf and cover with remaining Roux. Bake 30 minutes at 400 Degrees Fahrenheit. Remove from the oven. Do not turn off oven yet, you’ll be using it again in a few minutes to broil.
- Melt 1 tablespoon of butter in a large skillet over medium-high heat. Fry eggs, adding optional salt and pepper to taste. Cook until the whites are nearly set, about 3 minutes. Carefully flip the eggs and continue cooking until the whites are completely set, about 1 minute more. You’re going to top each sandwich with a fried egg. Top eggs with shredded Gruyere and put the sandwiches back in the oven and broil for 1-2 minutes or until cheese melts.
